Bean, Tomato and Vegetable Red Curry

Method
(Serves 2-4)
1. Mix 1 tbsp Mekhala Organic Red Curry paste, 1 can tinned tomatoes and 1/2 can water in a heavy based pot over medium-high heat and bring to a boil.
2. Add 0.5-1 tin drained beans (or chick peas), 6 mushrooms (sliced) and 1 cup broccoli florets, lower heat and simmer till cooked.
3. Serve with brown rice.
